Chocolate Ganache Vanilla Thumbprint Cookies

Tender and buttery vanilla thumbprint cookies with a semi-sweet creamy chocolate ganache filling. An easy cookie recipe that’s perfect for holiday parties or when you want something a little more sophisticated than a chocolate chip cookie.

time commitment: 2 hours total, 1 hour inactive time
special equipment: stand mixer with paddle attachment, small cookie scoop, rimmed baking sheet, heat-proof bowl, small sauce pan, heat source

It's embarrassing how quickly we ate through these cookies, considering we didn't share them with anyone...

My husband isn't necessarily a "sweets" guy - well, he is, just for very specific things - so when he really enjoys one of my recipes, it feels like I've knocked it out of the park.

These cookies are ones we kept opening the microwave for (because we have cats and no food can live on the counter - fellow cats people will get it) over and over again. They're the perfect sized cookie for when you want a little sweet treat and that chocolate ganache filling...I'm very proud to say I got the silky-smooth texture I was looking for after several trials.

While we didn't end up sharing them because they went a little too fast, I encourage you to make enough to share with the people in your life.

I think I speak for many when I say that the world feels so unbelievably heavy right now. It's so easy to shut ourselves away when things feel like that - to try and process in our own safe spaces in whatever way makes sense - but I'm learning that it's so important to exist with other people in times like these. Even for an introvert, like myself.

Yes, take the time you need to feel and process, but also spend time in community. Because when we get out of our heads and into the world, we realize that not all hope is lost.

So make these cookies, or, better yet, make a recipe that is meaningful to you (your grandmother's recipe? that loaf of sourdough you've been perfecting, perhaps?) and share it with someone in your life. Maybe it's a friend you haven't seen in a while, maybe it's a neighbor you don't speak to very often. Whoever it is, connection is everything right now.

Bake something delicious. Botch the recipe and bake something awful and have a laugh. Bake with a friend if going out and taking baked goods to people you don't know well is too big of an ask. Hell, throw a party.

The important thing is just don't be alone, doom scrolling the day away.

There are good things in the everyday. Sometimes, you're the one who needs to create them.
