Pumpkin Spice Snickerdoodles

Cozy pumpkin spice snickerdoodles with ever so slightly crispy edges and just gooey enough middles. Made with Libby's 100% pumpkin puree and store-bought pumpkin pie spice blend.

As a general rule of thumb, I don't think pumpkin spice should be out and about pre-September. It just feels wrong. And I really think waiting until fall to savor it makes it that much sweeter. So the start of October is the earliest I'll go :)

(Don't worry, I won't be exclusively leaning into pumpkin spice recipes. Plenty of other cozy things coming up!)

These pumpkin spice snickerdoodles avoid the "cakey" cookie trap of working with pumpkin by reducing the moisture in pumpkin puree on the stove. It makes all the difference! Only took me five rounds of recipe testing to get there...

This pumpkin spice snickerdoodles recipe...

  • uses store-bought pumpkin puree and pumpkin pie spice blend to keep ingredients simple and minimize steps,
  • reduces pumpkin puree and blooms the spices on the stove for perfectly cozy flavor and the perfect texture,
  • and results in a light-as-air crinkly snickerdoodle with slightly crispy edges and a soft center. The dream.
